Whoa, “more profitable?” That’s totally new wording, that’s only partly related to the mention of “cost” at the beginning. That kind of shift means the author changed the subject, and the right answer will have to connect the “more profitable” thing to the key piece of support about “better tasting”.
Map the wording of the answers to the wording of the passage:
(A) The use of organic farming methods has recently increased…
There’s nothing about tastiness or profits, so this really doesn’t support the conclusion at all.
(B) …those that are most profitable in the short run.
I like the reference to “long run” since that maps to the wording of the passage. But we have no info on which farms do best “in the short run”, and the passage never references that comparison. This doesn’t support the conclusion.
(C) Demand…is based primarily on flavor.
This is a classic example of how the test changes the wording a bit, but expects you to see this all maps. “Demand” is definitely relevant to being “more profitable”, and “flavor” corresponds to “better tasting”. This is making exactly the connection we need to make sense of the author’s argument.
(D) …apples that have the lowest price.
Which apples are those? We have no idea, since the passage only mentions “cost” but not price. You’d have to assume this is related to the apples in the passage, and you’re not allowed to make your own assumptions on the LSAT.
(E) Many consumers prefer the appearance…
Stop. The passage never mentions “appearance”, so you’d have to add in your own reasoning to make that connect to the wording of the passage. Eliminated.
(C) is the correct answer.
Common pattern/s in this question: Recognizing when the author changes the subject, usually by bringing new wording in to the conclusion, kicks you into high gear reading over those answers. And good news, authors change the subject several times on every LR section.
